Taco Night! Build-your-own taco lettuce wraps with Mexican-seasoned grass-fed beef, avocado, tomatoes, sweet peppers, scallions, and homemade hemp seed dressing. Easy to make. Prettier to photograph!


Beef: Cook one package of grass-fed beef in a large pan until brown. Season with organic taco seasoning from Thrive Market.


Toppings: Cut up an avocado, grape tomatoes, sweet peppers, and scallions.


For the dressing: In a coffee grinder (or small blender) combine 1/4 cup of hemp seeds, a handful of chopped mint, some garlic powder, 2 tablespoons lime juice, 2 tablespoons water, 1 tablespoon olive oil, a dash of smoked paprika, and salt. Blend until smooth.
