LOADED BAKED SWEET POTATO WITH BACON AND AVOCADO

Feeling stressed today? Me too. Pretty sure I found the cure (see above)… You’re welcome. The key to happiness is a baked sweet potato!

 

Recipe:
Heat oven to 400. Poke holes in the sweet potatoes with a fork. Rub them in coconut oil and sprinkle with pink salt (this creates crunchy, salty skin that is divine). Put potatoes on a rimmed baking sheet. Cook for 45-60 minutes depending on the size of the potatoes. Take them out when they start to caramelize on the bottom and insides are mushy. Your house will smell so sweet while these babies cook… almost like cinnamon buns, no lie.

 

Split potatoes with a knife and drizzle with olive oil and then sprinkle with salt and pepper. Add avocado, pastured bacon, DF feta, and cilantro. Serve with a salad. I used fresh greens from my garden topped with pecans. Drizzle with olive oil and balsamic for the dressing. So easy. So yummy!
