AVOCADO TOAST BAR with homemade gluten-free bread

When it comes to avocado toast it’s all about the bread!

 

PAMELA’S GLUTEN-FREE BREAD: Cook this bread based on package instructions. The bread has to rise and then cook in the oven so this takes about 2 hours. It’s worth it if you have the time… your house will smell amazing and there’s nothing quite like the taste of fresh bread out of the oven! If you’d rather skip the bread making, look for gluten-free bread options in the freezer section of your grocery store (Udi’s is a good brand).

 

TOPPINGS:

HUMMUS: Buy organic hummus at the store or make your own using tahini, garlic, chickpeas, and salt in a blender.

 

AVOCADO: Cut three avocados into chunks and put them in a bowl. Sprinkle them with lime juice and pink salt.

 

EGGS: Cook 4 eggs over easy.

 

BACON: Cook bacon your way and chop it into small pieces (to sprinkle on the toast). I get my sugar-free no-nitrate bacon from Wellness Meats.

 

TOMATOES: Cut up some organic grape tomatoes.

 

SPROUTS: Buy 3 different kinds of sprouts for toppings. I use broccoli sprouts, pea shoots, and radish sprouts for a spicier flavor, or just use whatever is available at your local farmer’s market. They are all delicious!

 

Put the bread on a cutting board for slicing. Place all toppings on a large circular serving tray. Let your guests help themselves! I would layer everything on the bread in the order above.
