This is a super simple and delicious side dish with a Middle Eastern flair!
Set oven to 400. Slice three sweet potatoes into wedges. Add the wedges to a bowl and drizzle with avocado oil. Season with salt and pepper. Arrange sweet potatoes onto an unlined baking sheet. Roast until caramelized for about 30 minutes. In a small bowl, whisk KiteHill plain yogurt (or your fav yogurt of choice) with lime or lemon juice, salt, pepper, and za’atar seasoning. Drizzle over potatoes. Top with chopped scallions. Serve with a big salad!
Cooled potato leftovers make a great resistant starch (to feed the good bugs in your stomach).
